SpinaCh Caprese Salad

This simple and satisfying salad makes a perfect side dish to any Italian entrée. Fibrous spinach will keep you full and satisfied. The combination of ingredients will give you a balanced meal with protein, healthy fats, vegetable-based carbohydrates, and a ton of vitamins and minerals. Make a single serving for yourself, or multiply the ingredients to feed an army of guests!
Low Carb / Gluten-Free
4 1⁄2 teaspoons extra-virgin olive oil
1 tablespoon balsamic vinegar
Freshly ground black pepper
1 1⁄2 cups baby spinach
1⁄2 cup cherry tomatoes, quartered
1 ounce fresh mozzarella, cubed
2 tablespoons chopped fresh basil
1. In a salad bowl, sprinkle the cherry tomatoes, mozzarella, and basil over the baby spinach.
2. Drizzle the olive oil and balsamic over the top, season with salt and pepper, and enjoy.
